Trying to determine wether or not planes fly over a particular section of the catskills, and if so how many how often. Working on a funded environmental documentation project involving 4k filming on location for ecological analysis and archival purposes, concerned about flyover noise.

What would be the best way to go about getting this kind of data? I've thought of recording a flight tracker like the one found at flightaware, but it just strikes me that there must be a another way someone better informed in this field of flightfever knows; and I hope that someone is you.

    PLS & TY

You could visit https://planefinder.net/ of course and start counting traffic overflying your area of interest.

Alternatively, you could contact The OpenSky Network. They provide free air traffic data for academic research purposes.
